Soy cured bluefin, three days aged.

Golden eye snapper, skin kissed by charcoal.

四Uni toastsignature

Santa Barbara uni, brioche, brown butter.

五Wagyu & wasabiwarm

A5 Miyazaki, fresh root, nothing else.

六Tamagofinal

Sweet egg, castella style. The chef's grandmother's recipe.
